Lemon Oats Salad
Ingredients

Salad Components

  • 12 tbsp Quaker rolled oats
  • 200ml chicken stock
  • 1/2 Japnese cucumber (diced)
  • 100g cherry tomatoes (half)
  • 2 chicken tenders
  • Parsley for garnish

 

Dressing

  • 1 lemon (juice)
  • 3/4 tsp black pepper
  • 3 tbsp olive oil
  • 1 clove of garlic (grated)
  • 1/4 tsp salt
  • 3 tbsp honey
Procedure
  1. Toast oats until golden brown.
     
  2. Mix the dressing and set aside.
     
  3. When ready to eat, boil chicken stock and add oats into it. Cook for approximately 3 minutes until no stock is left.
     
  4. Meanwhile, put a teaspoon of oil in a pan and fry chicken tenders for 2 minutes on each side. Slice into bite size.
     
  5. Mix all the salad components together and dress accordingly.
     
  6. Plate in a bowl and garnish with a few leaves of parsley.
