Oats Meatball with Tomato Sauce
Ingredients

Makes 8 Meatballs (side dish for 2 or main course for 1 when added with 90g of pasta)

 

Meatball

  • 200g 90% lean minced beef 
  • 1/2 tsp salt
  • 1/2 egg
  • 3 tbsp oats
  • 30g milk
  • 2 tbsp chopped parsley
  • 1 heap tbsp grated cucumber/ zucchini (shave off green skin)
  • 2 tsp Parmasan (optional)

 

Tomato Sauce

  • 3 cloves of garlic
  • 1 tbsp olive oil
  • 1/2 can of San Marzano tomatoes 
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 2 sprigs of rosemary 
  • 2 springs of thyme
Procedure
  1. Soak oats in milk and let sit for 10 minutes.
     
  2. In another bowl, mix all of the other meatball ingredients and oats once ready. Shape meat mixture into 8 equal balls and set aside.
     
  3. Place whole garlic in a medium heat pot cook with olive oil. Once light golden in colour, switch off the gas and cover the pot with the lit. Let garlic soften in the pot for 10 minutes.
     
  4. Remove lid and switch on the fire to medium high again. Once garlic starts to sizzle, pour in the can of tomatoes, half a can of water, aromatics and let it simmer gently over low fire for 30 minutes.
     
  5. Once sauce has reduced, season with salt and pepper. 
     
  6. Heat a pan with 1/2 a tablespoon of oil until smoking and pan fry meatballs until evenly brown all around.
     
  7. Place meat balls into sauce and coat them.
     
  8. Serve and garnish with a grating of parmasan cheese (optional).                           *For pasta meat ball version, double the sauce recipe and mix in cooked pasta first before the meat balls.*
