Quaker Oaty Jap Curry
Ingredients

(can serve 3-4 pax)

For curry :

~ 300g chicken thigh, cut into cube 

~ 100g yellow onion, cut into thin slice 

~150g carrot, cut into cube

~150g potato, cut into cube 

~ 100g red apple, grated

~ 1 Tbsp soya sauce, for marinating chicken

~ 900ml water 

~ 100g butter

~ 3 Tbsp oil 

~ 3 Tbsp ketchup 

~ 3 Tbsp Worcestershire sauce 

~ 3 Tbsp of Quaker instant oat

~ salt to taste 

 

For roux :

~ 60g butter 

~ 60g wheat flour 

~ 3 Tbsp curry powder

~ Chilli powder (optional)

 

For Rice :

~ 1.5 cups of short grain rice

~ some sesame seed 

~ some seaweed

~ some yellow pickled radish 

Procedure

Roux :

  1. Heat the butter over low heat 
  2. Add in wheat flour
  3. Stir constantly till turn brown for around 15mins 
  4. Add in chilli powder (optional) 
  5. Add in curry powder
  6. Mix well and into thick paste
  7. Set aside

 

Curry :

  1. marinate chicken with soya sauce 
  2. add oil and pan fried chicken to set aside 
  3. add butter and caramelized onions
  4. add in the chicken, carrots and potatoes
  5. add in water and bring to boil for 45mins
  6. add Worcestershire sauce and ketchup 
  7. add salt accordingly to your taste 
  8. add in roux and Quaker instant oat 
  9. keep stirring for 15mins

 

This Quaker oaty jap curry goes well with short grain rice too. Add some sesame seed, seaweed and radish to go with the rice, it will be a perfect healthy lunch.
