Oat Milk Eggnog

- 1/2 cup Quaker Quick Cook Oatmeal
- 2 cups water
- 1 teaspoon maple syrup or agave
- 1 teaspoon vanilla extract
- 6 egg yolks
- 1/2 cup sugar
- 1 cup heavy cream
- 1/2 teaspoon ground nutmeg
- Pinch of salt
- Shaved chocolate (for topping)


1. Put the Quaker Quick Cook Oatmeal and water into a blender and blend at high speed for 45 seconds

2. Strain the oat milk mixture through a fine mesh sieve or nut milk bag

3. Add the maple syrup or agave and vanilla extract to the strained oat milk and set aside

4. Whisk the egg yolks and sugar together until creamy and set aside

5. Combine the oat milk with heavy cream, ground nutmeg and salt in a saucepan and heat until it starts to simmer, stirring regularly

6. Add a spoonful of the hot oat milk mixture to the egg mixture and whisk. Repeat this until all the oat milk mixture has been incorporated with the egg mixture

7. Return the combined mixture to the stove and heat until it thickens (about 2-3 minutes), stirring regularly

8. Remove from heat and refrigerate until chilled

9. Serve in small glasses and top with shaved chocolate for a healthy Christmas treat!
