Vegeterian Breakfast Salsa And Egg Oats Bowl
Ingredients
  • 100g cherry tomatoes 
  • 1 stalk of parsley
  • 1.5 tsp black pepper
  • 1/3 diced red onion
  • 1/2 lemon/ lime (juice)
  • Pinch of salt
  • 1 tsp sugar
  • 6 tbsp rolled oats
  • 180g chicken stock
  • 1 egg
  • Spring onion for garnish
Procedure
  1. Cut cherry tomatoes into halves, chop parsley and mix with black pepper, red onion, lime juice, salt and sugar. Set aside in the fridge and let it marinate.
     
  2. Boil chicken stock and put oats into it. Cook for 5 minutes. 
     
  3. Fry a sunny-side up egg in a medium heat non-stick pan and season with black pepper.
     
  4. Place oats into a bowl and lay the egg on top. Followed by chilled salsa.
     
  5. Garnish with spring onion on the egg.
