Festive Oatmeal Pineapple Tarts
Ingredients

Filling:

  • 500g pineapple jam

 

Pastry Dough:

  • 120g Quaker instant oatmeal
  • 150g cake flour
  • 50g sugar
  • 40g skim milk powder
  • 200g salted butter
  • 2 egg yolks
  • Half teaspoon vanilla essence

 

Egg wash:

  • 2 egg yolks
  • 2 teaspoon water
  • 2 teaspoon oil
Procedure
  1. Roll the pineapple jam into 10g balls
  2. Blend the instant oatmeal in a blender until it has the consistency of flour
  3. Sift and combine the cake flour, oatmeal flour, sugar and milk powder
  4. Cut the butter into small cubes and rub the butter cubes into flour mixture until it resembles coarse breadcrumbs
  5. Add the egg yolks and vanilla essence and mix together until it forms a soft and smooth dough
  6. Roll the dough into 15g balls
  7. Flatten a ball of dough and place the pineapple jam ball in the centre and seal into a ball
  8. Place on a baking tray and place in the chiller for 15 minutes
  9. Preheat oven to 150 degrees C
  10. Brush the balls with egg wash and bake for 25 minutes or until golden brown
  11. Let cool on tray for 8 minutes and then transfer to wire rack to cool completely
